Oakville’s Hexagon Restaurant chef Rafael Covarrubias was announced as the winner of the S.Pellegrino Young Chef Competition North American Regional Semifinal. 25 years old Covarrubias will compete in May 2020 for the Grand Finale in Milan, Italy.
Unique Winning Dish
Chef Covarrubias’ signature dish, his Mole Negro Spiced Muscovy Duck, Preserved Prune, and Winter Roots won the approval of the panel of esteemed culinary judges. The judges were composed of Poole’s Diner Ashley Christensen, CHARCUT Roast House’s Connie DeSousa and John Jackson, Buca Restaurants’ Rob Gentile, Zahav’s Michael Dolomonov, and food writer and author Jordana Rothman. They awarded Covarrubias with top marks for his genuine creativity, technical skills, and one-of-a-kind personal belief about gastronomy.
Covarrubias shared that he came to Canada from Mexico fueled by his love of cooking and that he is so honoured to represent North America in the upcoming Grand Finale in Milan. He further shared that he met so many other hardworking and outstanding chefs in the competition and that he hopes to inspire them to keep pushing for excellence to achieve their goals.
North America’s Representative
Covarrubias will compete against 11 other regions from across the globe for the honor of winning the title of S.Pellegrino Young Chef 2020. Each young chef will present his or her’s signature dish to a panel of 7 distinguished and international chefs. Covarrubias will be mentored by CHARCUT Roast House’s Connie DeSousa.
Various Honours Awarded to Deserving Chefs
S.Pellegrino also awarded new recognitions in this year’s competition to reflect their belief that the power of gastronomic delights extends well beyond the kitchen. They are the following:
- Acqua Panna Award for Connection in Gastronomy: Netted by Chef Jeremy Stephens of New Orleans, Louisiana. his signature dish is Crawfish Boil. Regional mentors voted for his dish which they’ve selected to represent the beauty of various cultures melting together to create something exciting and fresh.
- Fine Dining Lovers Food for Thought Award: Awarded to Chef Marvin Palomo of Oakville, Ontario for his signature dish, Dungeness Crab Chawanmushi. Fine dining lovers of the community voted for this dish. They thought that the dish well-represented the chef’s personal beliefs.
- Pellegrino Award for Social Responsibility: Won by Chef Kathryn Ferries of Ottawa, Ontario for her Forest Honey Glazed Rabbit Ballotine with Fennel Chanterelles and Mustard Greens signature dish. Food Made Good, an internationally recognized voice on sustainability in food voted for this award. The dish represented the principle that food is best when it is prepared with sustainable practices in mind.
The awardees of the special awards are also invited to attend the grand finale in Milan, Italy.
